About This Coffee

This washed lot is sourced from Magdelena Camaja as part of our Cafe Delas programme. Café Delas was created to help women farmers access the resources, knowledge and voice they need to grow their operations to the fullest potential. Every Café Delas coffee is sourced 100% from women farmers and for every sale, a portion of the profit is reinvested in programs that promote gender equality and empower women in the field. 

In the mountains of Cubulco, Baja Verapaz, Magdalena Camajá Calo represents a shift, from necessity to opportunity, from learning to mastery. Eight years ago, coffee wasn’t part of the plan. Like many in the community, income came from seasonal migration to the southern coast. But when that path closed, Magdalena made a decision: to start something new. With no prior experience, the first coffee trees were planted as a leap of faith. What followed was a journey shaped by training, hands-on learning, and steady progress. With support from institutions and the strength of family, Magdalena built knowledge year by year; improving crop health, refining practices, and raising quality.

The Region

Chuachacalte, in the municipality of Cubulco, sits within the rugged landscape of Baja Verapaz - defined by mountains, rocky formations, rivers, and dense vegetation. At 1,700 meters, the environment brings cool temperatures and fresh conditions ideal for coffee production.

The region is deeply rooted in Achí culture, where language, land, and tradition are closely tied. Farms are surrounded by natural vegetation, and the mountainous terrain shapes both daily life and agricultural practices.
Here, coffee is still emerging—but gaining ground. With improving methods and growing knowledge, producers are transforming the region into a new origin to watch, where potential is turning into consistent quality

Baja Verapaz lies in Guatemala’s central highlands, where elevations stretch from 1,200 to 1,600 m.a.s.l. The region’s microclimate is unique—cool, misty mornings, filtered sunlight, and consistent rain fed by nearby cloud forests. The limestone-rich soil adds to the distinctiveness, giving coffees from this region a particular clarity and mineral-driven sweetness. Farming here is small-scale and often generational, with plots carved into steep slopes and surrounded by native forest. While not as widely known as Huehuetenango or Antigua, Baja Verapaz delivers a cup that’s just as compelling: layered florals, citrus brightness, soft stone fruit, and a clean, refined structure.

 

The Process

After harvest, cherries are depulped using a small mechanical system, then transferred into concrete tanks for fermentation. The coffee ferments for around 12 hours, just enough time to break down the mucilage and prepare it for a clean wash.

Once washed, the beans are dried on concrete patios for 4 to 5 days, depending on weather conditions. Rain and humidity at this stage are critical variables, requiring close monitoring to avoid defects. The tools may be simple, but the control is precise. The result is a washed coffee that reflects care, discipline, and a clear focus on improving every cycle.
