About This Coffee

The Region
Guji is a celebrated coffee-growing zone in Ethiopia’s Oromia Region, named after a tribe of the Oromo people. Bordered by Borena to the south and Bale across the Ganale Dorya River to the north, Guji’s high elevations and coffee cultivating traditions make it one of Ethiopia’s most sought-after regions. The zone’s highest point, Mount Dara Tiniro, and towns like Negele anchor a landscape of smallholder farms that thrive in rich soils, plentiful sunshine and ideal rainfall.
Formed in 2002 when upland woredas were separated from the Borena Zone, Guji has quickly built a reputation for coffees with vibrant fruit character, floral aromatics, and a clean, layered sweetness—qualities that continue to draw the attention of roasters around the world.

The Process
This lot was processed using an anaerobic (oxygen-free) fermentation, a method that intensifies the fruit character of the coffee. Only fully ripe cherries were selected, hand-sorted to remove underripe and overripe fruit before being packed tightly into vacuum-sealed bags.
Fermentation was carefully monitored over four days. After removal from the tanks, the coffee was dried slowly on raised African beds for 15–18 days.
The result is a cup with heightened clarity, juicy sweetness, and layered fruit/funky notes.
